Starch Soluble is a white powder that is freely soluble in hot water and insoluble in cold water, making it suitable for controlled laboratory applications. It is a plant carbohydrate reserve, stored in leaves, chloroplast and tubers and seed amyloplasts. It is used as a reference standard in amyloglucosidase activity assays, and for enzymatic studies and analytical methods. Structurally, it is composed of two major polysaccharides, amylose and amylopectin, to which its functional properties are related. Being the principal energy source for humans and the major storage molecule in plants, it holds importance in both biological and research contexts.
