    Food products with low pH are typically protected from microbial contamination, though some bacteria are adapted to grow. Acid tolerant microorganisms can cause spoilage in products such as fruit concentrates, fruit pastes and tomato products, hence identifying these organisms is critical in determining the quality and shelf life of the food.
    Acid Broth is a medium for the recovery of aciduric bacteria from canned and acid food products. It will support the growth of organisms such as Bacillus coagulans, Lactobacillus, Leuconostoc, certain Pediococcus species, streptococci, and some spoilage yeasts that grow in acid conditions. Its composition contains invert sugar, a mixture of glucose and fructose that is a quick energy source and helps maintain suitable growth conditions. Contains peptone and yeast extract that supply further nutrients and amino acids needed for the growth of the microbes.
