Description
Casein (Soluble in Alkali) is a processed protein product available as an off-white to creamy, amorphous powder. Its composition is carefully controlled, with loss on drying not more than 10.0% and total ash not exceeding 4.0%, to ensure uniformity and stability while using.
With a minimum protein content of 90.0% on a dry weight basis, it can be used in nutritional and structural protein studies. Microbial quality is kept within defined limits, with a total viable count not exceeding 10,000 cfu/g and E. coli test is negative, resulting in a controlled biological integrity.
Casein has been used as a solid food model in vivo and in vitro investigation and in the preparation of P407–casein hydrogels to study mechanical properties after protein inclusion. Its ability to solubilize in alkali, promotes easy dispersion and processing in experimental preparations.
